Recipe Ingredients for Chicken Continental

300 grams / 3 boneless skinless chicken breasts, (cut into 2-3 in pieces)
2 tablespoons Olive Oil
1 teaspoon bay leaf / 1 bayleaf
4 cloves garlic, crushed and chopped
1 large onion, sliced
2 cups (16-ounce) can low sodium whole tomatoes, diced
2/3 cup low sodium soy sauce
3 cups low sodium chicken or vegetable broth
6 jumbo green olives, drained and sliced
2 cups white basmati rice
3 cups water

Recipe Directions for Chicken Continental

Prepare 2 cups rice with 3 cups water according to rice package directions. Heat 1 Tbsp oil in a dutch oven or saucepan over medium high heat. Sauté onion and garlic until transparent. Remove onion and garlic and set aside. Heat 1 Tbsp oil in dutch oven. Add chicken and brown slowly. Drain pan and strain chicken pan broth. Stir in strained pan broth, tomatoes, soy sauce, broth, and reserved onion and garlic. Bring to a low boil. Add bay leaf. Cover saucepan and simmer over low heat for 1 hour or until chicken is cooked through and tender. Remove bay leaf. Stir in olives and heat for an additional 15 minutes. Sauce may be thickened with cornstarch mixture if needed. Serve ladled over rice.
