You can use whatever vegetables you like best. If you omit the canned pumpkin it will be runnier.

Recipe Ingredients for Chicken Coconut Curry

2 cups green beans
2 cups broccoli
1 cup pumpkin, canned
14 oz light coconut milk
2 1/2 cups chicken, cooked
1 tbspn fish sauce
1 tbspn red curry paste

Recipe Directions for Chicken Coconut Curry

In a large skillet or pot, put your veggies, coconut milk, fish sauce, and pumpkin. Heat on med-high till the veggies are tender-crisp. Stir in the curry paste. Add the chicken and heat through. Serve with rice or rolls if desired.
