Adapted from allrecipes.com. Mix in 1 serving of chicken with oil and brown. Serve with rice and veggies, or mix in frozen peas and/or red pepper strips.

Recipe Ingredients for Chicken - Coconut Curry

1/8 tsp. black pepper
10 g. coconut oil
2 T curry powder
2 T. garam masala
250 g. onion
25 g. Minced Garlic
135 g. lite coconut milk
411 g. Organic Diced Tomatoes
610 g. chicken
510 g. frozen broccoli
1/2 t. coarse sea salt

Recipe Directions for Chicken - Coconut Curry

  1. Season chicken pieces with pepper.

  2. Heat oil and curry powder in a large skillet over medium-high heat for two minutes. Stir in onions and garlic, and cook 1 minute more. Add chicken, tossing lightly to coat with curry oil. Reduce heat to medium, and cook for 7 to 10 minutes, or until chicken is no longer pink in center and juices run clear.

  3. Pour coconut milk, tomatoes, tomato sauce, and splenda into the pan, and stir to combine. Cover and simmer, stirring occasionally, approximately 30 to 40 minutes.
