Recipe Ingredients for chicken coconut curry

14 oz coconut milk
1 small onion
3 cloves garlic
1 tbs grated ginger
2 cups turkey
1 cup frozen vegetables
1 tsp salt
1/8 tsp lime zest
1 tbs olive oil
1/2 cup turkey broth
2 tbs butter
1/2 cup shredded carrot
3 tbs curry powder
1 tsp red pepper flakes
1 tsp sugar

Recipe Directions for chicken coconut curry

  1. put onion, garlic, pepper flakes and ginger in a food processor. Blend until mushy.

  2. Heat olive oil in sautee pan over med high heat. Add onion mixture. Sautee until onion is translucent and soft. Add turkey broth a tbs at a time if mixture sticks to the pan.

  3. Coat turkey with curry powder and put in pan with onion mixture. Cook until browned.

  4. Add coconut milk, sbutter, sugar, salt, lime zest. Mix in well, scraping bits from bottom of the pan.

  5. Cover, cook on med low heat for 10-15 minutes.

  6. Add all veggies, stir, cover, cook another 5-10 minutes

  7. Tasty additions at the end: either1/4 cup chopped cilantro or thai basil
