Recipe Ingredients for Chicken & Chunky Vegetable Soup

12 c water
1 head cabbage
6 medium potatoes
1 lb baby carrots
6 medium yellow squash
12 stalks celery
1 medium onion
2 medium bell peppers
1 lb portabella mushrooms
1/4 c salt
1/4 c black pepper
56 oz diced tomatoes
24 oz diced chicken breast fillets, boneless, skinless
1/4 c granulated garlic
1/4 c dried basil

Recipe Directions for Chicken & Chunky Vegetable Soup

Rough chop all the vegetables in large pieces. If using baby portabellas, leave them whole. Put all vegetables, salt, & pepper in a large stock pot. Fill pot with enough water to completely cover vegetables. Bring to a boil then reduce heat to a simmer. Let simmer until vegetables are tender, about 20-30 minutes. Add diced tomatoes & chicken & let simmer for an additional 10 minutes to cook chicken. Stir in garlic & basil during last 2 minutes.
