I love garlic and butter, this is an attempt to make a reasonable meal with the two. I reduced the amount of pasta to make up for the 3 tablespoons of butter. The fat is still high but for a meal that weighs in at under 2Kcal/g fits my bill for an good lunch.

Recipe Ingredients for Chicken - Chris' Chicken Scampi, 1.85Kcal/g

13 oz skinless chicken breast
14 1/2 oz Tomatoes
4 1/2 oz Whole Grain Linguine
3 tbsp butter
2 tbsp olive oil
33 g (1 head) crushed garlic
10 g (1/8 cup) fried onions
1 tbsp red chili pepper
1 tsp dried oregano
1 tsp Basil, Dried

Recipe Directions for Chicken - Chris' Chicken Scampi, 1.85Kcal/g

  1. Fill a large pot 2/3th the way with water, bring to a boil.

  2. Add olive oil and spices to a bowl. Cut chicken into thin 1 inch strips, all to bowl and coat. crush the garlic and set aside.

  3. Add the pasta to the pot of boiling water and cook for about 7 minutes. Add butter to a large skillet over medium high heat. When butter begins to foam add the coated chicken. Cook and stir till white on both sides.

  4. Reduce heat to medium and add the garlic. After 1 minute add the tomatoes and reduce heat to medium low.

  5. Once the pasta is done, remove form the pot and add directly to the skillet. (I use tongs for this, you may with to drain then dump) Stir to coat the pasta.

  6. Optional, serve with some shredded parmesan cheese .
