Jamie Oliver's Chicken Chow Mein (Ministry of Food - page 60)

Recipe Ingredients for Chicken Chow Mein

6 tsp ginger root
2 cloves garlic
28 g chilli pepper
250 g chicken breast
2 spring onions
1/2 cup coriander
1 head bok choy
4 shitake mushrooms
100 g egg noodles
3 tbsp peanut oil
220 g water chestnuts
1 tsp cornflour
3 tbsp soy sauce
1 fruit lime

Recipe Directions for Chicken Chow Mein

  1. Peel and finely slice ginger and garlic.

  2. Finely slice the chilli and spring onions.

  3. Slice the chicken in to finger sized strips and lightly season with salt and pepper.

  4. Pick coriander leaves and finely chop the coriander stalks.

  5. Half the bok choy lengthways.

  6. Tear mushrooms in to pieces.

  7. Heat a wok to a very high heat and add groundnut oil.

  8. Add chicken and cook until chicken browns slightly.

  9. Add ginger, garlic, chilli, coriander stalks, mushroom and half the spring onions.

  10. Stir-fry for 30 seconds.

  11. Add noodles and bok choy to a pan of boiling water and cook for 2-3 minutes.

  12. Add cornflour, water chestnuts and their water to the wok and stir.

  13. Remove wok from heat and stir in 2 tablespoons of soy sauce.

  14. Half the lime and squeeze the juice of one half in to the pan and mix well.

  15. Drain the noodles and bok choy in to a colander over the bowl, reserving a little of the cooking water.

  16. Stir noodles, bok choy and a little of the cooking water into the wok, mix well.

  17. Season with soy sauce if required.
