Recipe Ingredients for Chicken Chorizo Rice and Beans

7.2 oz Chorizo Sausage
0.83 cup VIGO YELLOW RICE
3 cup Chicken Broth
3.5 serving Diced Basil Garlic and Oregano Tomatoes
2 cup Black Beans
1 medium (2-1/2" dia) Onions
1 cup, chopped Peppers, Sweet, Green
1 tbsp Extra Virgin Olive Oil
4 piece Fresh

Recipe Directions for Chicken Chorizo Rice and Beans

  1. braise chicken in olive oil. 4-5 mins on each side. remove chicken and fry chorizo until cooked.

  2. In separate pan, cook onions and green pepper for 15 minutes stirring frequently.

  3. add chicken back in to chorizo pan. add chicken broth, scraping up bits on the bottom of the pan to deepen the flavor. add beans, tomatoes, onions and green peppers to the mix bring to boil. Add yellow rice and boil one minute. Reduce heat and simmer for 1 hour, or until chicken is cooked, or until the chicken is falling apart.
