Mexican Hominy Soup with Chicken and Chorizo

Recipe Ingredients for Chicken & Chorizo Posole

12 oz Chicken
16 oz Premium Mexican Recipe Chorizo Sausage
4 medium Tomatillos
1 onion Yellow Onion
3 pepper Peppers, Jalapeno
4 clove Garlic
32 oz Chicken Stock
30 oz Hominy
3 tsp Quality Spices Cumin
1 tablespoon Oregano
1/2 cup cilantro
1 fruit+2"+dia Lime

Recipe Directions for Chicken & Chorizo Posole

  1. Brown chorizo in a large pot ot dutch oven. Once browned remove from pot. Cook chicken in chorizo fat until done. Remove chicken from pot, cool, and shred.

  2. Prep and clean tomatillos, onion, jalepeno, and garlic cloves. Half the onion, tomatillos, and jalapenos. Roast these vegatables at 425 for 25-30 minutes. When done chop vegatables in food processor to desired texture.

  3. Deglaze pot with chicken stock. Add to pot: Shredded chicken, chorizo, veggie mixture, and spices. Cook until flavors meld.

  4. Add hominy and cook until warmed through.

  5. Add cilantro and lime juice to finish and serve.
