Recipe Ingredients for Chicken & Chorizo Pasta

16 oz Fresh Boneless Skinless Chicken Breasts
7 1/2 oz Chorizo
1 medium Bell Pepper Red, roasted, finely chopped
3 tbsp chopped Shallots
8 ounces spaghetti
28 ounces Chicken 33% Less Sodium Broth Rtsb
1 serving Garlic Cloves
4 tbsp canola oil
1/4 cup all purpose flour
15 oz Stewed tomatoes

Recipe Directions for Chicken & Chorizo Pasta

  1. Cut chicken into 2 inch chunks, dice red pepper, and mince shallot and garlic. Drain tomatoes.

  2. Dredge chicken in mixture of flour, salt, & pepper, and brown on all sides in canola oil.

  3. Move chicken to plate.

  4. Add chorizo to pan, breaking it up and letting it brown for a couple of minutes. Add the red pepper, garlic, and shallot. Cook for a few minutes until tender.

  5. Add spaghetti (broken up), broth, tomatoes (drained). Bring to a boil, add chicken, cover and reduce heat.

  6. Cook until noodles are tender and chicken is cooked through. Add water as needed until done.
