So good! It's the "gravy" that makes it chop suey and this is delicious and loaded with veggies!

Recipe Ingredients for Chicken Chop Suey

1/2 lb. skinless chicken, boneless and cooked
1/4 tsp. garlic powder
2 T. soy sauce
1 c. chicken broth
2 T soy sauce
2 T. cornstarch
1/2 tsp. ground ginger
1 T. olive oil
2 1/2 c. broccoli
1 c. carrot, sliced
1/2 c. corn
1 c. onion
1 c. celery, diced

Recipe Directions for Chicken Chop Suey

  1. In a bowl, combine chicken (shredded or chopped), garlic powder and soy sauce; cover and shake well to coat; set aside.

  2. Cut veggies into bite-sized pieces. In one bowl, place broccoli and carrots. In separate bowl, place corn, onion and celery.

  3. In a separate bowl, combine chicken broth, soy sauce, cornstarch, and ginger; stir well and set aside.

  4. In a large skillet or wok over med-high heat, stir fry broccoli and carrots in olive oil for about 3 minutes or until tender-crisp.

  5. Add corn, onion and celery; stir fry for another 2 minutes.

  6. Stir broth mixture and chicken into vegetable mixture; cook until chicken is heated through and sauce thickens, about 3-4 minutes.

  7. Serve over rice or crisp chow mein noodles.
