Healthy green chicken chili that's spicy and good! You can spritz with lime and serve with tortillas if you need more carbs.

Recipe Ingredients for Chicken Chili Verde

1 T Canola Oil
1 1/2 lbs. chicken breast, cut into 1 inch cubes
1 c Chicken Broth
15 oz Salsa Verde, hot
1 large Onion, quartered
3 large Green Bell Pepper, chopped into big chunks
15 oz Chili Beans
10 oz tomatoes with chiles

Recipe Directions for Chicken Chili Verde

  1. Heat the oil in a large skillet or sauté pan over high heat.

  2. Season the pork or chicken with salt and pepper.

  3. Working in batches so that you don?t overload the pan, add the meat the pan and sear on all sides until caramelized on the outside but still raw in the center (don?t overcrowd the meat or it will steam, not brown).

  4. Transfer to a slow cooker.

  5. Add the broth to the hot skillet and use a wooden spoon to scrape up any crispy, flavorful bits of meat.

  6. Pour the broth over the meat, along with the Salsa Verde, onion, and bell pepper.

  7. Set the slow cooker to high and cook for 4 hours (or low and cook for 8), until the meat is extremely tender. If using the potatoes, add them to the pot in the final hour of cooking.

  8. Serve the meat in bowls with the stewed vegetables, along with a ladle of the cooking liquid. Have hot corn tortillas and lime hunks on hand for makeshift tacos.
