Found this basic recipe in a Woman's Day Magazine, just "healthified" it.

Recipe Ingredients for Chicken Chili

2 tbsp olive oil
1 red bell pepper
1 onion
15 oz freshly ground chicken breast
2 tbsp chili powder
1 tsp coriander
2 tsp cinnamon
1 tsp cumin
1 tbsp garlic powder
2 tbsp cocoa
1 tbsp sugar
6 cups V-8 juice
15 ounces black beans
15 ounces red beans

Recipe Directions for Chicken Chili

  1. Saute the onion and pepper in the olive oil for two to three minutes. Add the chicken breast and cook for three to five more minutes, breaking up meat as necessary.

  2. Add all seasonings and juice. Simmer on low for half an hour.

  3. Add beans and cook for up to three more hours.

  4. May serve with low fat sour cream and cheese on top; just remember to log extra calories.
