Modified from www.bushbeans.com White Chicken Chili. It's not so white with the addition of chili powder and salsa.

Recipe Ingredients for Chicken Chili

1 tbsp olive oil
1 medium onion, chopped
1 tsp garlic, minced
3 servings green chiles, chopped (4 oz can)
1/3 cup salsa
2 tsp ground cumin
2 tsp chili powder
1/2 tsp garlic powder
1 tsp onion powder
1 3/4 cups great northern beans
1 3/4 cups cannellini beans
14 1/2 fluid ounces low sodium chicken broth
1 1/2 cups cooked chicken breast, finely chopped

Recipe Directions for Chicken Chili

  1. In a large skillet, cook the onion and garlic in olive oil for 4 minutes, or until transparent.

  2. Add the chiles, salsa and spices. Cook and stir for 2 minutes.

  3. Add the beans and chicken broth, and bring to a boil.

  4. Reduce heat and simmer for 10 minutes. (note: at this point, I transferred it to a crock pot and cooked on low for a couple hours.)

  5. Add chicken and cook until hot.

  6. Garnish with cheese, sour cream and salsa, if desired.
