One of our regular favorites. Fast and easy.

Recipe Ingredients for Chicken Chili

1 tablespoon olive oil
1 1/2 pounds chicken breast, cut in bite-sized pieces
1 cup onion, chopped
2 cups chicken broth
1/4 cup hot peppers, chopped
1 clove garlic, minced
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon cilantro
1 dried red chili pepper, broken into a few pieces
38 oz. red kidney beans, drained and rinsed

Recipe Directions for Chicken Chili

Heat oil in a large pot over medium high heat. Add chicken, garlic, dried red chili, and onion and sauté for 4 to 5 minutes. Stir in broth, chipotle peppers, cumin, oregano, and cilantro. Reduce heat to low and simmer for 15 minutes. Stir in beans and simmer for 10 minutes.
