hearty chicken chili for those cool fall and winter days

Recipe Ingredients for chicken chili

3 lb chicken breast
10 cloves garlic
1 med zuccini
2 cups salsa
28 oz canned tomatoes
28 oz canned hominy
4 large tomatoes
2 tbls butter
2 tbls olive oil

Recipe Directions for chicken chili

  1. cook chicken or use pre cooked, dice

  2. saute chicken and garlic in butter and olive oil

  3. add tomatoes cook till tender

  4. add rest of ingredients, cumin, cilantro, salt and pepper to taste

  5. simmer at least 1/2 hour.

  6. serve with cottage cheese or cheese of choice, remember to add calories for cheese
