Homemade enchilada sauce. Most of the time I add green chiles to the sauce to spice it up!

Recipe Ingredients for Chicken & Chili Bean Enchiladas

2 cup, chopped or diced Chicken, Breast, Meat Only
1.75 cup Chili Beans
12 oz Cheese
1 small Onions
2 serving Extra Virgin Olive Oil
7 serving Hunt's Sauce
2 cup Chicken Broth
1.5 serving Daisy Sour Cream
5 serving White Corn Tortillas

Recipe Directions for Chicken & Chili Bean Enchiladas

  1. Mix cooked and shredded chicken, 1 cup of cheese and beans. Set aside.

  2. Heat oil over medium-high heat. Add chopped onions and saute until golden. Add tomato sauce; simmer until very thick, about 12 minutes. Add broth; bring to simmer. Remove from heat; whisk in sour cream. Stir 1/2 cup sauce into chicken mixture.

  3. Spread 1/2 cup sauce in a 13-by-9-inch ovenproof glass dish. Place one layer of tortillas. Layer 1/2 of chicken mixture next. Finally pour sauce half of remaining sauce over the chicken. Repeat layers. Layer any/all remaining tortillas and cover with remaining 1/2 cup cheese.

  4. Bake until bubbly, about 20 minutes.
