Chicken Chickpea Curry Recipe

This is a dryish curry, sort of like a karhai, stirfry. It's nice with a house salad or raita and bread. I skip the bread to save calories and eat it with a gigantic salad with low calorie dressing. NOTE: to help with the fat from the oil, you can use olive oil either solely or even in combination with the vegetable oil.

Recipe Ingredients for chicken chickpea curry

56 7/10 grams Vegetable Oil, Canola
1 medium (2-1/2" dia) Onions
1 medium Tomatoes
8 oz Chicken
1 tsp Cumin Seed
1 tsp, ground Cardamom
1 tsp Cinnamon, Ground
2 clove Garlic
3 tsp Ginger Root
15 1/2 oz Garbanzo Beans

Recipe Directions for chicken chickpea curry

  1. heat oil in pan

  2. fry sliced onion til light beige

  3. add a little salt as desired (not included in recipe)

  4. add freshly ground spices and fry for 1-2 minutes while stirring

  5. add and fry garlic for 1 minute

  6. add and fry ginger for 1 minute

  7. add and fry pureed tomatoes for 3-4 minutes

  8. add chicken and fry til almost done

  9. add canned garbanzo beans and fry

  10. keep frying until the chicken is done and tender

  11. be careful not to let the mixture burn and you can add water if necessary a tablespoon at a time

  12. serve with bread or rice
