A delkicious fragrant curry, not too hot, which goes well with puris or brown rice

Recipe Ingredients for Chicken & Chickpea Chole

3 tbsp vegetable oil
1 medium onion, chopped
2 cloves garlic, crushed
1 oz root ginger
4 tsp ground cumin
1 tbsp ground coriander
2 tsp chilli powder
1 tsp turmeric
2 cans chickpeas, drained and rinsed
13 oz Tomatoes
1 1/2 tsp soft brown sugar
2 tbsp lime juice
4 tbsp coriander leaves, chopped
10 oz Boneless Skinless Chicken Thighs
1/2 red onion, sliced

Recipe Directions for Chicken & Chickpea Chole

  1. Heat the oil in a heavy based saucepan, add the onion, garlic and ginger and fry over a gentle heat, stirring frequently, for about 5 minutes or until softened but not coloured.

  2. Stir in ground cumin, ground coriander, chilli powder and turmeric and fry for 2 minutes. Add the chicken and fry, stirring, for 5 minutes. Add the chickpeas, tomatoes, sugar and a pinch of salt, and stir to combine the ingredients. Cover the pan and simmer the curry gently, stirring occasionally, for 10 minutes.

  3. Stir in 1 tbsp lime juice and the coriander leaves and heat through for a further 2 minutes. Taste the curry and add the remaining lime juice and a little more salt if needed. Serve hot, garnished with sprigs of coriander and slices of red onion.
