Different and a good use for leftover pumpkin after Halloween.

Recipe Ingredients for Chicken, Cheese and Pumpkin Casserole

1090 grams chicken, cut in cubes (about 2 lbs.)
10 3/4 ounces cream of mushroom soup, 98% fat free
1 3/4 cups water
1 cup long grain white rice, uncooked
4 ounces mushrooms, sliced
1/2 teaspoon onion powder
12 ounces pumpkin, cooked and cubed
1 cup peas
1/2 teaspoon garlic salt
1/2 teaspoon ground black pepper
1/2 cup chedder cheese, grated

Recipe Directions for Chicken, Cheese and Pumpkin Casserole

  1. Place soup, water, rice and spices in bottom of 13 X 9" casserole. Mix well. Layer on mushrooms, pumpkin and peas. Place raw chicken on top and season with Montreal Chicken spices.

  2. Cover whole casserole with aluminum foil and bake for 50 minutes. Remove from oven, sprinkle on cheese and bake 5 more minutes.
