Recipe Ingredients for Chicken with Celery and Onions

1 breast, bone and skin removed Chicken, Breast, Meat Only
1 stalk, large (11"-12" long) Celery
1 medium (2-1/2" dia) Onions
0.083 cup Cornstarch
4 serving Cooking Wine
2 tbsp Vegetable Oil, Canola

Recipe Directions for Chicken with Celery and Onions

  1. Cut chicken into small strips. Best if done while partially frozen.

  2. Put 1 tablespoon of cornstarch on chicken and mix.

  3. Heat oil in a wok or deep frying pan.

  4. Place pieces of chicken in the oil trying to separate while putting them in the pan.

  5. Cook the meat on high, stir frying constantly until just done.

  6. Remove from pan.

  7. If necessary, add more oil and let it heat.

  8. Place angled slices of celery and onions in the pan.

  9. Stir fry on high.

  10. When celery and onions are tender, return chicken to the pan.

  11. Pour about 1/4 cup of white cooking wine into the pan to deglaze.

  12. If this amount of wine is not quite adequate to deglaze the pan and make a nice sauce, you may add water a couple of tablespoons at a time until the sauce is the preferred consistency.
