Recipe Ingredients for Chicken and Cauliflower Couscous

3 lb boneless chicken breast
3 c cauliflower
3/4 lb onion
4 cloves garlic
1 c lemon juice
3 oz red bell pepper
3 oz green bell pepper
1/3 c chicken stock
3 tbsp olive oil
1/4 c parsley
3 tbsp rosemary
1 tsp thyme
1 tsp oregano
1/2 tbsp turmeric
1/2 tsp cayenne pepper
1/4 tsp paprika
1/2 tsp salt

Recipe Directions for Chicken and Cauliflower Couscous

  1. Mix the herbs, lemon juice and 3 TBSP of oil

  2. Pour over chicken and marinate 2 hours

  3. PLace cauliflower florets in food processor and pulse until the texture of couscous

  4. Chop onions, garlic and peppers and saute 4 minutes

  5. Add in cauliflower and saute 5 minutes

  6. Add in chicken and marinade and stock

  7. Cook covered for 10 minutes

  8. Cook uncovered for 20 minutes

  9. Serve and enjoy!
