Yummy chicken dish that has a little bit of a kick if you use Rotel diced tomatoes (2 cans equals 20 oz.)

Recipe Ingredients for Chicken Casserole

1 lb cooked chicken breast
20 ounces diced tomatoes
1 can cream of mushroom soup
1 bell pepper
1 onion
1 lb processed cheese
4 cups cooked rice

Recipe Directions for Chicken Casserole

  1. Saute pepper and onion. Add Rotel tomatoes (2 cans) and 1 can cream of mushroom soup. Stir until blended. Add cheese and stir until melted. Add cooked rice and cooked chicken. Stir until blended.

  2. Pour into 13 x 9 baking pan and bake at 350 for 30 minutes.
