Makes 3 casseroles. Eat one, freeze two for a quick weekday meal.

Recipe Ingredients for Chicken Casserole

5 cups chopped cooked chicken
5 cups chopped celery
8 green onions, chopped
6 oz sliced olives
1 1/3 cup slivered almonds
3 1/2 cups shredded cheese, divided
1 cup miracle whip
1 cup fat free sour cream
4 oz potato chips, crushed

Recipe Directions for Chicken Casserole

  1. Mix together chicken, celery, green onions, olives and almonds. Stir in 1 cup of the cheese.

  2. In a separate bowl mix mayonnaise and sour cream. Pour mixture into chicken, mix completely.

  3. Spoon into three greased casserole dishes. Top one with 1/2 cup of the chips and 1/2 cup of the cheese.

  4. Bake uncovered at 350 for 25 minutes.

  5. Freeze remaining chips and cheese in separate bags with casseroles. To serve, thaw completely, top with chips and cheese and bake at 350 for 25 minutes.
