A Healthier Version of Standard Chicken Casserole

Recipe Ingredients for Chicken Casserole

9 oz egg noodles, dry
1 medium onion
3 cloves garlic
1 pound portabella mushrooms
1 1/2 tbsp olive oil
1 can evaporated milk
3 cups frozen vegetables
2 cups chicken, stewed
1 tsp Worcestershire sauce
2 cups shredded cheese
1/2 tsp black pepper

Recipe Directions for Chicken Casserole

  1. Cook noodles according to package directions.

  2. In a large saucepan, heat oil over medium heat.

  3. Add onion, garlic, and mushrooms, and saute until mushrooms release their moisture.

  4. Add evaporated milk and simmer until thickened slightly.

  5. Combine chopped chicken, frozen vegetables, Worcestershire sauce, pepper, one cup of shredded cheese, mushroom mixture and noodles in a large mixing bowl, then pour into a large casserole dish.

  6. Sprinkle last cup of cheese over whole dish and bake around 375 degrees for 30 minutes, until top is brown and dish is heated through.
