An easy chicken casserole with ingredients on-hand

Recipe Ingredients for Chicken Casserole

2 1/2 lbs chicken breast, stewed, chopped
1 cup mayonnaise
1 large onion, chopped
1 package cornbread stuffing
2 1/2 cups chicken broth
4 eggs
1/2 cup Silk Light Plain Soymilk
1 can cream of chicken soup
8 tbsp Country Crock Light margarine, melted

Recipe Directions for Chicken Casserole

  1. Stew chicken in a crock pot until tender and done; chop into small chunks

  2. Preheat over to 350 degrees

  3. Combine chicken, mayonnaise, and onion; set aside

  4. Combine stuffing mix, chicken broth, melted butter, two (2) eggs

  5. Spray a large casserole dish with cooking spray; spread half of the stuffing mixture in the bottom of the pan; top with the chicken mixture; spread the remaining stuffing on top.

  6. Mix together remaining eggs, soup, and soymilk; pour over top of casserole

  7. Bake for 45 minutes; allow to set 10 minutes before serving
