Recipe Ingredients for Chicken Casserole

1 cup celery, chopped
1 cup green bell pepper, chopped
3/4 cup onion, chopped
2 tbsp butter
1 cup chicken broth
1 cup frozen corn
1 cup frozen peas
1 tsp salt
1/4 tsp pepper
3 cups cooked chicken, cubed
7 ounces whole wheat macaroni, cooked and drained

Recipe Directions for Chicken Casserole

  1. In a large skillet, saute celery, green pepper and onion in butter until tender. Add broth, corn, peas, salt and pepper; heat through. Stir in chicken and macaroni.

  2. Place in a rectangular baking dish coated with cooking spray. Top with mushrooms and cheese.

  3. Cover and bake at 350 for 20 minutes. Uncover and bake 10 minutes longer or until heated through.
