My family's favorite chicken & rice casserole.

Recipe Ingredients for Chicken Casserole (full fat version)

2 cups onion - chopped
1 1/2 cups celery - chopped
1 cup carrots - chopped
2 tablespoons olive oil
4 cups Jasmine rice
4 cups chicken breast, cooked and cubed
8 oz. water chestnuts - drained and sliced
20 oz. (Campbell's) Cream of Chicken Soup
1 cup mayonnaise
2 oz. lemon juice
2 cups shredded sharp cheddar cheese
2 cups corn flakes - crushed
4 tablespoons butter

Recipe Directions for Chicken Casserole (full fat version)

Preheat oven to 350. Sautè onion, carrot and celery in olive oil until tender. In large bowl, combine soup, mayonnaise and lemon juice. Add rice, chicken, vegetables, water chestnuts, and cheese and blend well. Spoon into 9x13 casserole and bake for 30 to 40 minutes until bubbling. Melt butter and stir in Cornflakes. Top casserole with Cornflakes and bake an additional 10 minutes.
