salad of chicken, cashews & peas - normally served cold, but might be nice served hot over brown rice as well

Recipe Ingredients for chicken cashew salad

1 1/4 lbs boneless skinless chicken breast
1/4 cup olive oil
2 tablespoons soy sauce
1/4 tsp minced garlic
1/2 cup cashews
1 tablespoon crushed red pepper
1 1/2 cups frozen peas

Recipe Directions for chicken cashew salad

  1. cut chicken into bite sized pieces

  2. marinate over night in oil, soy sauce garlic mixture

  3. stir fry chicken, add peas, red pepper & cashews

  4. refrigerate - serve cold
