Recipe Ingredients for Chicken, Carrot & Potato Soup

4 pieces Boneless Skinless Chicken Tenderloins
1 small Onions
1 1/2 tbsp Minced Garlic
4 Cube Chicken Stock Cubes
8 oz 1% Low Fat Milk
5 cup, water
1 tsp Salt, Table
1 tbsp Unsalted Butter
1 cup, strips or slices Carrots
3 potato small (1-3/4" to 2-1/4" dia) Potatoes, Red, Flesh And Skin
2 tbsp Rosemary, Fresh
3 tsp Thyme, Fresh
1 tsp Pepper, Black
1 tsp Seasoning Blend

Recipe Directions for Chicken, Carrot & Potato Soup

add 5 cups of water to pot, set to boil, add bouillon cubes, 1 cup 1% milk, chicken tenderloins and all seasonings and allow chicken to cook (make sure you skim off the fat). After thinly slicing carrots and potatoes, add the carrots and potatoes to the pot as well, once chicken appears done, pull it out of the pot and shred it, set it aside. Let the carrots and potatoes cook till they are soft - and then blend the soup mixture together using either an immersion blender or regular blender, it may be a little thin but it will cook down - once it is blended, add the shredded chicken back in. Turn the heat down to medium low and cook for an additional 15-20 minutes.
