A healthier version of a classic Italian dish

Recipe Ingredients for Chicken Carbonara

1 lb Trimmed and Ready Premium Thin Sliced Boneless Skinless Breasts Chicken
38 g cooked bacon
16 ounces Whole Wheat Spaghetti
3/4 cup Parmesan Cheese reduced fat
1 egg
1/2 cup heavy cream
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup white wine
1/4 cup (240 g) reduced sodium chicken broth
1 tablespoon lemon juice
1 cup mushrooms
1 teaspoon minced garlic
2 tbs extra virgin olive oil
1 tbs dry basil
1 tbs dry parsley

Recipe Directions for Chicken Carbonara

  1. In a small bowl mix together parmesan cheese, egg, heavy cream, salt and pepper. In another bowl mix together wine, chicken broth and lemon juice. Set both aside. Bring a pot of water to a boil for cooking the noodles. In a large skillet cook bacon in batches until crispy. Drain on paper towels. In another skillet, add1 tablespoon of olive oil, garlic & mushrooms and egg mixture then saute. Cut chicken into bite size pieces and cook in the same pan with the remaining olive oil, five minutes on each side. Deglaze the pan with wine mixture scraping up any bits on the bottom of the pan. Cook for about 2-3 minutes. Place noodles in boiling water and cook according to package directions. While noodles are cooking crumble bacon slices into bits and in a large bowl mix combine chicken, bacon bits, wine glaze mixture, mushrooms and parmesan/egg mixture. Drain noodles and shake to get rid of any extra water.

  2. Add mixture to piping hot noodles and mix well. Add basil and parsley. Serves one cup of pasta with around 3 ounces of chicken.
