Recipe Ingredients for Chicken with Caramelized Cauliflower

2 1/2 lb. cauliflower
2 tbsp extra virgin olive oil
1 1/5 lb. chicken breast tenders
1 tsp. grated lemon peel
1/2 cup slivered almonds
7 stuffed Olives
1/4 cup fresh parsley

Recipe Directions for Chicken with Caramelized Cauliflower

  1. Preheat oven to 450. In 18 xy 12 jelly-roll pan, combine dauliflower, 2 tsp oil, 1/4 tsp salt (I did not use this much), pepper,. Spread in single layer in pan. Roast 20 to 25 minutes until cauliflower is golden brown.

  2. While cauliflower roasts, in large bowl, combine chicken (cut into 1 inch pieces, lemon peel, and pepper. When cauliflower is turning brown (about 22 minutes of cooking), move cauliflower to one side of pan, and add chicken mixture in a single layer. Return to oven and cook for 10 minutes or until chicken pieces are no longer pink. (it took me 15 minutes but we want our chicken fully cooked.)

  3. Meanwhile, in food processor with knife blade attached, pulse almonds until finely ground. Add olives and parsley and pulse until almost smooth. With machine running, add remaining tablespoon of oil until miture is fully incorporated. Add mixture to pan and stir until well combined. Transfer to serving plates. Garnish with additional parsley.
