Caesar salad with a lot less olive oil!

Recipe Ingredients for Chicken Caesar Salad

2 Garlic cloves
2 Egg yolks
250 grams chicken breast
1 tsp Dijon mustard
2 tbsp lemon juice
1/4 cup Olive oil
1000 grams romaine lettuce
1/2 cup fresh Parmigiano-Reggiano cheese
12 oz bread

Recipe Directions for Chicken Caesar Salad

  1. Rub the inside of a large wooden bowl, with the garlic cloves.

  2. Remove the garlic cloves, and finely chop. Add the egg yolks, remaining garlic, anchovies and mustard to the bowl. Whisk until all of the ingredients are incorporated. Whisk in the lemon juice.

  3. Slowly drizzle in the olive oil, while whisking constantly. Whisk until all of the ingr Gently tear the lettuce into bit-size portions and add to the salad bowl.

  4. Using a hand-held grater, grate the cheese into the bowl.

  5. Fry chicken strips in 1/2 tbsp of olive oil. Cut into bite-sizwed pieces and put on top of salad.

  6. Add the croutons. Toss the salad completely and re-season if necessary. Serve the salad on cold salad plates.
