This recipe has been passed down from a family recipe that had no measurements. I entered it in a church contest and won!

Recipe Ingredients for Chicken Cachiatori

3 chicken breast
3 chicken thighs
3 chicken wings
3 chicken drumsticks
16 oz tomato sauce
3 T olive oil
1 cup onion, chopped
3 clove garlic, chopped
1/4 tsp rosemary
1 tsp thyme
1/2 tsp sage
2 T parsley
1 cup white wine
8 oz mushrooms, sliced
10 oz green olives, sliced

Recipe Directions for Chicken Cachiatori

  1. cook chicken in oil until it changes color but not browned.

  2. add onion, garlic, and herbs. cook until broken down.

  3. Add tomato sauce and simmer one hour.

  4. Add mushrooms, wine and olives and simmer one more hour.

  5. Serve over rice or spaghetti
