Chicken with a vegetable sauce served over rice

Recipe Ingredients for Chicken Caccitore

3 lbs boneless skinless chicken thighs
28 oz tomatoes
8 oz mushrooms
1 cup sliced carrots
1 med zucchini
1 large onion
1 clove garlic
1 large green pepper

Recipe Directions for Chicken Caccitore

Cook chicken until just browned. Drain and remove from heat. Stir minced garlic, sliced onion, and chopped green pepper in together. Cook until onion is clear. Add in can of whole tomatoes chopped. Simmer until the water cooks down. Add carrots, zucchini and chicken. After cooked a little add mushrooms. Cook until chicken is done. Serve over rice... mmm mmm mmm
