Recipe Ingredients for Chicken Cacciatore - Slow Cooker

3 sprays cooking spray (preferably olive oil)
3 garlic cloves, smashed
1 medium onion, sliced
1 green bell pepper, sliced into 1/2-inch wide strips
1 yellow bell pepper, sliced into 1/2-inch wide strips
8 oz baby bella mushrooms, quartered
12 chicken drumsticks
1 teaspoon kosher salt
1 dash freshly ground black pepper
28 oz canned crushed tomatoes
1/4 cup parsley, fresh chopped
8 oz Barilla Plus rotini (about 2 cups dry)
6 tablespoons freshly grated Parmesan cheese

Recipe Directions for Chicken Cacciatore - Slow Cooker

  1. Spray a small skillet with olive oil cooking spray, and place over medium heat. Add garlic and cook, stirring, until golden, about 2 minutes; transfer to slow cooker.

  2. Add onion, bell pepper and mushroom. Sprinkle chicken with salt and pepper, and place on top of vegetables; add basil, oregano, and thyme to crushed tomatoes and pour over chicken; cover and cook for 4 hours on high or 8 hours on low. Chicken should be very tender. Stirin parsley.

  3. Bring a pot of salted water to a boil and cook rotini according to package directions until al dente. Drain and transfer to a large serving bowl.

  4. Place chicken on 6 plates. Skim fat from surface of sauce and discard. Spoon some sauce over chicken. Serve pasta with remaining sauce and cheese on each plate.
