"Hunter's" Chicken, with tomatoes and mushrooms - very Tasty - and only 275 calories per serving!

Recipe Ingredients for Chicken Cacciatore, Skillet Style

7 oz spaghetti noodles, uncooked
24 oz frozen chicken breast, thawed (3 large breasts)
1 1/2 tbl low-fat margarine, divided
1 tsp garlic powder
1 tbl parsley flakes
1 oz black olives, sliced thin
1/2 oz onion, chopped
3/4 oz green pepper, chopped
3 oz canned mushrooms (equals 1 can, thoroughly drained)
14 1/2 oz diced tomatoes
3/4 cup spaghetti sauce

Recipe Directions for Chicken Cacciatore, Skillet Style

  1. Cook noodles per package directions, omitting salt. Drain and set aside.

  2. Cut breasts in half, as equally as possible. Arrange in micro-wave safe pan. Put 1/2 tsp low-fat margarine on each chicken piece. Sprinkle with garlic powder and parsley. Cook 4 minutes. Turn chicken over, sprinkle second side with garlic powder and parsley and cook 4 minutes. Turn again twice, cooking 3 mins. more each side.

  3. Meanwhile, spray large with non-stick cooking spray, and add 1/4 Tbl low-fat margarine. Melt over high heat, reduce to medium-high and add olives, green pepper, onion, and mushrooms. Cook until tender.

  4. Add tomatoes and spaghetti sauce, stir well. Reduce heat to medium and continue cooking.

  5. Add cooked chicken to large skillet. Spoon sauce over chicken, and cook 5 minutes until flavors blend.

  6. Serve. Portion contains 1 half chicken breast, 3/4 cup spaghetti noodles, and 1/3 cup sauce and vegetables.
