Recipe Ingredients for chicken cacciatore

1 pound uncooked boneless, skinless chicken breast, four 4-oz pieces, pounded ***i used thinly sliced (for scallopini is what is says on
1/2 tsp salt
1/4 tsp black pepper
1 medium onion(s), chopped **i used a cup of frozen chopped onion
1 medium green pepper(s), chopped **i just did chunks, strips might work too
1 yellow pepper(s), chopped
1 garlic clove(s), minced **i used 1 tsp of jarred minced garlic
1/2 cup wine, dry, red
29 oz canned stewed tomatoes, Italian-style **i couldn't find a big can so i used two 14.5 oz cans
1 tsp Italian seasoning , or to taste
2 tbsp parsley, snipped **i omitted this
6 oz spaghetti, whole wheat, dry (cook as directed)
2 tbs cornstarch, mixed with a little water

Recipe Directions for chicken cacciatore

  1. Season chicken with salt and pepper. Lightly coat a large nonstick skillet with cooking spray.

  2. Add chicken breasts and cook over medium heat until browned and juices run clear, about 5 minutes on each side.

  3. Add onions, pepper and garlic to skillet.

  4. Cook until vegetables are softened, about 2 minutes.

  5. Stir in wine, tomatoes and Italian seasoning.

  6. Bring to boil, then reduce heat to medium-low.

  7. Cover and simmer 20 minutes.

  8. Sprinkle with parsley and serve with pasta.

  9. i added about 2 tablespoons of cornstarch - dissolved in a small amout of cold water and then stirred into the boiling sauce to thicken it...
