A delicious and fairly healthy Italian-American dish.

Recipe Ingredients for Chicken Cacciatore

2 tbsp Extra Virgin Olive Oil
406 g boneless skinless chicken thighs
1 medium onion, sliced
1 large red bell pepper, thinly sliced
12 black olives, pitted and chopped
4 cloves garlic, minced
1 tsp red pepper flakes
1/2 cup red wine
1 1/2 cups chicken broth
1 lb tomatoes, coarsely chopped

Recipe Directions for Chicken Cacciatore

  1. Heat the oil in a large cast iron skillet or saute pan over high heat. Season the chicken with salt and pepper and add to the skillet.

  2. Cook until lightly browned and crisp on all sides (8-10minutes) and transfer to a plate

  3. Lower the heat and add the next 5 ingredients to the pan

  4. cook until the vegetables are softened (about 10 minutes)

  5. Pour in the wine and simmer, stirring occasionally, until it's nearly evaporated, about 5 minutes

  6. add the broth, tomatoes and chicken to the skillet.

  7. bring to a simmer and cook over medium heat for another 20 minutes, until sauce is reduced by half.
