Recipe Ingredients for Chicken Cacciatore

1 lb. boneless chicken breasts
1 teaspoon freshly ground black pepper, more to taste
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
28 ounce diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons Capers
1 1/2 teaspoons dried oregano leaves
1/4 cup Basil, Fresh

Recipe Directions for Chicken Cacciatore

  1. Sprinkle the chicken pieces with 1 teaspoon of each salt and pepper. Dredge the chicken pieces in the flour to coat lightly.

  2. In a large saute pan, heat the oil over med-high heat. Add chicken breasts, saute until just golden ~ 5 min. per side. You can also grill the chicken breasts separately - this allows you to reduce the olive oil used to 2 Tbls.. Set chicken aside. Add the bell pepper, onion and garlic to the saute pan, cooking over med. heat until tender, ~5 min. Season with pepper. Add white wine, simmer until reduced by half, ~3 minutes. Add tomatoes with juice, chicken broth, capers and oregano. Return chicken pieces to the pan and turn to coat in the sauce. Simmer over med-low heat until chicken is just cooked through, ~30 min.

  3. Transfer chicken to a platter, and if needed, boil sauce until it thickens up a bit more.

  4. If serving with a pasta, cook to al dente separately.

  5. On serving platter (or individual plates), arrange pasta & chicken as desired, ladle sauce over pasta and chicken pieces, sprinkle basil over the top and serve.
