Recipe Ingredients for Chicken Cacciatore

840 g chicken thighs
600 g chicken breasts with skin and backbone, halved crosswise
2 teaspoons salt, plus more to taste
1 teaspoon freshly ground black pepper, plus more to taste
1/2 cup all purpose flour, for dredging
3 tablespoons olive oil
1 large red bell pepper, chopped
1 onion, chopped
3 garlic cloves, finely chopped
3/4 cup dry white wine
28 ounce diced tomatoes with juice
3/4 cup reduced-sodium chicken broth
3 tablespoons Capers
1 1/2 teaspoons dried oregano leaves
1/4 cup Basil, Fresh

Recipe Directions for Chicken Cacciatore

  1. Sprinklel chicken with salt and pepper and dredge in flour. Heat olive oil in a large saute pan. Add chicken and saute just until brown. You may have to do this in two batches. Transfer to a dish.

  2. Saute onions, garlic and pepper until onion is tender or about 5 minutes. Season with salt and pepper. Add wine and simmer until reduced to about half; about 3 minutes. Add tomatoes and their juice, broth, capers and oregano. Return chicken pieces to the pan and turn them to coat. Bring the sauce to a simmer and cook over medium-low heat until chicken is just cooked through, about 30 minutes for the breast pieces and about 20 minutes for the thighs.

  3. Using tongs, transfer the chicken to a platter. If necessary reduce the sauce over med-high until until it is slightly thickened, about 3 minutes. Spoon off any excess fat. Ladle over chicken and sprinkle with basil and serve.
