Recipe Ingredients for Chicken Cacciatore

7 lb shredded chicken
1 lb onion, diced
8 oz onion, diced
1 lb green pepper, diced
8 oz green pepper, diced
1 tsp garlic
5 oz margarine
2 lb mushrooms, sliced
6 lb tomatoes, diced, canned in juice
10 oz tomatoes, diced, canned in juice
1/2 tsp oregano
1/2 tsp thyme
4 cups chicken stock
4 oz flour
2 cups water

Recipe Directions for Chicken Cacciatore

  1. Saute onions and peppers with margarine until transparent.

  2. Add tomatoes with juice, chicken stock, mushrooms, and seasoning; heat to slow boil.

  3. Add flour and water mixture and stir until thick.

  4. Place chicken meat into two 12 x 20 x 2 inch steam table pans and pour vegetable mixture over top.

  5. Cover with aluminum foil.

  6. Bake at 350 F for 40 minutes (HACCP temp must reach 165 F for 15 seconds).

  7. Serve 1 cup serving over parsley noodles.
