Chiken cacciatore made with boneless chicken breasts

Recipe Ingredients for Chicken Cacciatore

32 oz Chicken
8 cup Tomatoes, Red, Ripe
6 oz Tomatoe Paste
2 cup, pieces or slices Mushrooms
2 cup, chopped Squash, Summer, Zucchini, Includes Skin
1 medium (2-1/2" dia) Onions
1/4 cup leaves, whole Basil, Fresh
1 tsp, leaves Thyme, Dried
3 tsp Garlic

Recipe Directions for Chicken Cacciatore

  1. Heat a large saute pan on medium high heat. Season the chicken with salt, pepper and garlic powder. Put 1 tbsp of olive oil in the hot saute pan and add the chicken. Saute chicken for 3-4 minutes on a side until browned, Remove from pan and set aside.

  2. Add the remaining olive oil to the pan and add the chopped onion and garlic to pan. Saute for 3-4 minutes until onion is softened.

  3. Add sliced musrooms and saute until musrooms begin to soften. Add the chopped zucchini and continue sauteing until musrooms are soft and zucchini begins to release its juices.

  4. Blend half of the tomatoes until pureed. add to pan. Crush the other half of the tomatoes and add to pan' Add tomatoe paste.

  5. Add all the remaining herbs to sauce, saute for 15 minutes.

  6. Return the chicken too the pan and simmer untill reduced too desired consistancy, and chicken is fully cooked.

  7. Serve over cooked fettuccine.
