Chicken left over from roasted chicken. Serve with whole wheat or Shiritaki Tofu noodles (they are in the tofu display case). You could also serve over spaghetti squash... the lowest calories way.

Recipe Ingredients for Chicken Cacciatore

6 oz chicken breast, cooked
28 oz tomatoes, crushed
1 cup onion, chopped
1 cup green pepper, chopped
2 cloves garlic, chopped
1 tsp Italian seasoning
1/2 cup parsley, chopped
1/2 tsp hot sauce

Recipe Directions for Chicken Cacciatore

Spray no stick pan with a shot of olive oil... add green pepper and onion. Stir that around till they soften and then add chicken cut into bite sized pieces and garlic. Stir that around a bit and then add the can of crushed tomatoes, hot sauce and Italian seasoning. Turn the heat to low and simmer about 20 min. Add the chopped parsley and serve over noodles.
