Yummy and Healthy Chicken Cacciatore

Recipe Ingredients for Chicken Cacciatore

4 leg, bone and skin removed Chicken, Leg, Meat Only
0.25 tsp Salt, Table
0.25 tsp Pepper, Black
2 1tsp Olive Oil
1 medium (2-1/2" dia) Onions
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium Green Bell Pepper
2 clove Garlic
4 oz Wine, Table, White
0.5 tsp Oregano, Ground
1 serving red pepper flakes
14.5 oz Tomatoes Diced No Salt Added

Recipe Directions for Chicken Cacciatore

  1. Rinse and pat dry chicken, then salt and pepper both sides.

  2. Heat oil in skillet on med-high heat. Brown both sides on chicken, approx 8 minutes. Remove chicken from skillet and put on plate and set aside.

  3. Reduce heat to medium, add in peppers and onions, cook approx 10 minutes. Add in garlic, stirring for 30 seconds. Add in white wine and then reduce by half.

  4. Add tomatoes and juices, oregano, and pepper flakes. (may add more pepper flakes for heat!) Let simmer for 10 minutes, covered.

  5. Return the chicken to the skillet and let simmer with veggie mix covered for 20 minutes, or until chicken cooked completely. Adjust seasoning as needed.
