Chicken cacciatore, lower in fat!

Recipe Ingredients for Chicken Cacciatore

110 g onion, diced
11 g garlic, sliced thinly
1584 g canned diced tomato
178 g green pepper, diced
288 g mushrooms, sliced
302 g chicken thigh

Recipe Directions for Chicken Cacciatore

  1. Chop onion, slice garlic thinly, chop green pepper and mushrooms, place into crock pot.

  2. Add canned tomato

  3. On stove, simmer boneless, skinless chicken thighs in chicken stock or water, until shred-tender. Remove chicken from stock, cool, shred, and add to veggies in crock pot. Save or discard the stock/water. you don't need it for the rest of this recipe, but can still be used for rice, veggies, etc...

  4. Cook on high in crock pot for 4+ hours, or until ready to eat. Serve over pasta, rice, or spaghetti squash.
