Recipe Ingredients for Chicken Cacciatore

2 medium onions, sliced
2 cloves garlic, minced
2 tablespoons Canola oil
3 pound chicken, meat only
16 ounce tomatoes, diced
1 medium green pepper
6 mushrooms, sliced
1 teaspoon dried oregano
1 teaspoon dried basil
1/2 teaspoon dried rosemary
1/4 teaspoon black pepper

Recipe Directions for Chicken Cacciatore

Cut the chicken into 2 thighs, 2 legs, 2 breasts, and 2 wi ngs. Cook the onions and garlic in the hot oil until tender. Remove onions. Add chicken pieces, a few at a time, and brown about 15 minutes. Add more oil if necessary. Return onions to the pan. Cut pepper into one inch pieces, and add to the skillet with the mushrooms. Stir the spices into the tomatoes and pour over the chicken. Add 2 bay leaves, if desired. Cover and simmer for 30 minutes. Stir in cup water or dry white wine, and cook, uncovered, over low heat about 15 minutes until chicken is tender. Discard bay leaves. Serve with hot cooked rice or noodles.
