Italian chicken dish that can be served over pasta or rice.

Recipe Ingredients for Chicken Cacciatore

1/2 red onion, chopped
1/2 red pepper, chopped
1/2 yellow pepper, chopped
2 tbsp. olive oil
1/2 tsp. salt
1/4 tsp. pepper
10 oz. chicken, cut into small pieces
4 tbsp. Italian dressing
1 tsp. Italian seasoning
1 clove garlic
14 oz. of diced tomatoes

Recipe Directions for Chicken Cacciatore

  1. Marinate chicken (I use boneless, skinless thighs) in Italian seasoning for a couple of hours

  2. Preheat oven to 425. Toss onions and peppers with olive oil and salt and pepper. Roast for about 30 minutes or until color starts to appear on vegetables.

  3. Saute chicken that has been marinated until golden. Add Italian seasoning and garlic. Add diced tomatoes. simmer 5 minutes. Add roasted vegetables with all juices. Mix to combine.

  4. Serve over angel hair pasta, optional.

  5. Add shredded parmesan cheese, optional.
