Chicken and vegetables in a tomatoe sauce

Recipe Ingredients for Chicken Cacciatore

3 lbs. skinless chicken thighs, bone in
1 large onion, sliced
4 cloves garlic, minced
1 large green pepper, sliced
28 oz can diced tomatoes
6 oz tomato paste
6 oz mushrooms
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. italian seasoning

Recipe Directions for Chicken Cacciatore

  1. Place all ingredients in a slow cooker and heat on low for 6-8 hours.

  2. or

  3. Brown the chicken in a pan coated with cooking spray.

  4. Remove chicken and place in a 13 x 9 baking dish.

  5. Next sauted the remaining ingredients until the vegetables are tender.

  6. Pour the sauce over the chicken, cover and bake at 375 for 45 minutes.

  7. Serve with whole grain pasta.
