Chicken thighs bites in tomato vegie sauce

Recipe Ingredients for Chicken Cacciatore

53 oz boneless, skinless chicken thighs
3 small green peppers
1 large onions
2 tsp minced garlic
2 1/2 oz mushrooms
29 oz diced canned tomatoes
6 oz tomato paste
1 tsp salt
1 tsp dried oregano
1/4 tsp pepper
1/2 tsp celery seed
2 bay leaves

Recipe Directions for Chicken Cacciatore

Brown chicken, remove from pan, add onion, peppers and garlic (2 cloves, minced) cook till tender, add spices and tomatoes and paste. Mix throughlty. add chicken back, simmer at least 1 hour. Can simmer longer. Maybe 2 hours.
